Teff is a grain that has red-brown and ivory varieties. It has been used traditionally for thousands of years in Ethiopian cuisine, particularly Injera – fermented pancake-like flat bread. Teff has a delicious, robust nutty flavour.


How to Use:

The wonderful nutty flavour of teff can be used in a huge array of dishes, both savoury and sweet. Get the day off to a great start by adding teff grain to smoothies for extra nutrition. Or make an energy packed porridge; simply simmer ½ cup of grain in 1 cup of coconut milk & ½ cup of water for about 15 minutes.

Add cinnamon, vanilla bean and honey or maple syrup to taste. Top with fresh fruit, berries or chopped nuts. Teff can be utilised as a supplement for rice, as a side dish or in exciting salad combos. Simmer ½ cup of grain in 1 cup of water, covered, for 6-8 minutes. Let stand with the lid on for a further 5-8 minutes, then fluff with a fork and enjoy. Alternatively, scatter raw grains over salads and stir-frys.

Teff can be milled into wholegrain flour that is fantastic for all your bread and baking needs. The nuttiness of teff also pairs irresistibly with chocolate. Add to your next raw chocolate creation, sprinkle over mousse or cacao chia pudding. Boost a batch of super food balls or muesli bars with a few handfuls of this nutritional grain.
