Christmas Cake In A Jar

This easy to make Christmas Cake In-A-Jar recipe is the perfect centre piece for your Christmas feast!

Instructions:

You will also need:

Zest or Juice of 1 Orange
3 Tbsp Olive Oil
3 Eggs or 50g of Milled Linseed as a vegan option
1/2 Vanilla Bean or 1 Tsp Vanilla Extract

  1. Preheat the oven to 150°C.
  2. Line the sides and base of an 18cm round cake tin with baking paper.
  3. Combine roughly chopped dried fruit, seeds from vanilla bean, orange zest & juice, olive oil (and beaten eggs or flax seeds if required).
  4. Add the remaining dry ingredients and mix thoroughly. You may need to add a little water at this point (especially if you are using linseed).
  5. Spoon the Christmas cake mix into your baking tin and bake for 90 minutes.
  6. Check with a skewer to see if it comes out clean – if not, bake for another 30 minutes. Cover the top if necessary to prevent over-browning.
  7. Cool, then remove the cake from the tin and decorate.

Serves as least 8 people.
